Yozakura Farm-to-table Menu

Hors d’oeuvres followed by flounder tinted pink with beet sauce and exclusively grass-fed beef steaks in a menu based on the image of yozakura—nighttime cherry trees—in bloom. The steaks are accompanied with a sauce featuring highly nutritious dates. The whole menu is especially prepared to suit panoramic views of the cherry blossoms at night.

The Enju Japanese-style restaurant takes great pride in its views of the seasonally changing gardens. This year, its special flower-viewing (hanami) box lunch takes as its theme Cherry-blossom Brilliance. It includes several such treats prepared with the season in mind as sakura-braised octopus and fragrant-baked salmon. For even a more delicious seasonal delight, it also contains distinctive Enju hand-formed nigiri-sushi.

Sushi at Its Seasonal Best

Start off with a sip of a light Japanese broth and some sake served with hors d’oeuvres featuring spring peak-quality ingredients. Then, after your body is warmed with sake, enjoy young bamboo shoots and red sea bream. Finally we’ll bring you mackerel sushi adorned with cherry blossom petals and hand-formed nigiri-sushi made with seasonal seafood. Everything blends to create a meal exactly suited to early springtime.

Kaiseki meals at the Enju change monthly in keeping with seasonal alterations in the Happo-en gardens. Producers take care of the ingredients by themselves and present them carefully. To shorten the distance from farms to tables, we make efforts to provide the ingredients as fresh as possible. We serves banquet dishes which using fresh seasonal ingredients of the month.

This year, the traditional Japanese-style restaurant Kochuan—named by the famous Japanese novelist Shusaku Endo, author of Silence—is presenting a special Cherry-blossom Menu, featuring a selection of treats made from ingredients at their seasonal best. To suit the characteristics of each kind of food, four kinds of superior bottled tea called The Dor are available. This is an excellent chance to modify the usual custom of pairing foods and wines by the sophisticated pairing of foods and teas.

Shunko Special Spring Kaiseki Menu

This year’s special kaiseki menu has been named Shunko, or Spring Fragrances. It features bamboo shoots casserole-baked in front of guests and accompanied by rice steamed with sakura shrimp, mini-scallops, green soy beans, and red perilla. As a forecast of the beginning of spring, it appeals not only to the taste buds but to all the senses.
