Happo-en to produce and facilitate Host Town food exchanges between

The Kingdom of the Netherlands & Yamada Town of Iwate Prefecture.

In conjunction with the Tokyo 2020 Games, the 2020 Host Town House will be established in the Ariake district of Tokyo (Musashino University Ariake Campus) to assist in conveying the charm of each municipality (host towns) that have been organizing training camps and other activities for participating countries.

Happo-en has been entrusted with the production of this project’s events, as well as food development, while supporting the host town activities of municipalities across Japan.

 

In December 2019, Happo-en collaborated with Yamada Town of Iwate Prefecture; which is one of the “Thank You for Reconstruction Host Towns”, to support international exchange activities with The Kingdom of the Netherlands; the host country for Yamada Town, through the use of food. A “dashi” (soup stock) was made using Yamada town ingredients to enhance the flavors of Dutch cuisine, making an unforgettable experience for everyone.

This time, inspired by that connection, we have decided to develop a menu based on the “Ocean’s Bounty” and “Mountain’s Bounty” soup stock from Yamada town and create an event that will demonstrate that the exchange between Yamada Town and The Kingdom of the Netherlands will continue even beyond 2020.

Yamada Town × Kingdom of the Netherlands: Three new food legacies emerge from Host Town Activities.

 

1. Developing an “Ocean’s Bounty Soup Stock” and “Mountain’s Bounty Soup Stock”, using ingredients from the ocean and mountains of Yamada Town.

 

2. An original menu developed based on the 2 soup stocks, paves the way for a new food legacy that can be cooked and enjoyed even in the Kingdom of the Netherlands.

 

3. A pop-up showroom to support the host town exchange of Yamada Town x the Kingdom of the Netherlands will be held on November 28th (Sat) and 29th (Sun), 2020.

 

 

  1. Developing an “Ocean’s Bounty Soup Stock” and “Mountain’s Bounty Soup Stock”,

using ingredients from the ocean and mountains of Yamada Town.

 

 

Targeting the municipalities of the three prefectures affected by the Great East Japan Earthquake (Iwate, Miyagi, and Fukushima prefectures), we will engage in Host Town exchanges with residents while sharing the results of reconstruction to overseas countries and regions that have supported us thus far as a part of the “Thank you for the reconstruction Host Town” program.

One participating municipality is Yamada Town of Iwate Prefecture, which has have continuous interactions with the Kingdom of the Netherlands since a Dutch ship entered their port in the Edo period. They are now participating in exchanges centered on food culture as a part of the Host Town initiatives.

Scallops, oysters and wood shiitake mushrooms, which are specialties of Yamada Town, were devastated by the Great East Japan Earthquake. However thanks to the support of many people, including those from the Netherlands, these products are returning to their pre-disaster state of vitality.

In order to express our gratitude, while delivering the blessings from the rich nature of Yamada Town to the Kingdom of the Netherlands and the world, we have co-developed a dashi (soup stock) with Yamada Town. These two soup stocks; “Oceans Bounty Soup Stock” and “Mountains Bounty Soup Stock”, were created with the aim of supporting Japanese food culture by using ingredients from the ocean and mountains of Yamada Town and are made without the use of salt or additives. This soup stock can be used as a cooking ingredient or served as an independent dish. (* Release date TBD)

Salt-free & Additive-free

A clear golden soup stock made with puffer fish, dried sardines, scallops and kelp from the ocean in Yamada Town.

 

 

[Mountains Bounty Soup Stock]

Salt-free & Additive-free

A vegetable-based soup stock with subtle accents of ginger made with raw wood shiitake mushrooms, soybeans and radishes from the forests of Yamada Town.

Using the two soup stocks created in collaboration with Yamada Town, Happo-en has created 3 dishes that will allow people to enjoy the food of both Japan and the Kingdom of the Netherlands. The following three dishes were developed in by Mr. Yamazaki, who runs the restaurant “Wami Ajidokoro Ippuku” in Yamada Town, and Happo-en’s Head Chef Joji Sugano. The food menu developed through this collaboration is destined to become a food legacy for the Host Town cultural exchange between Yamada Town and the Kingdom of the Netherlands; which will continue even after the Olympics.

 

 

 Yamada Towns signature Iso Ramen was made using the Oceans Bounty Soup Stock.

This Oceans Bounty Soup Stock Ramen has accents of Dutch mustard, dill and lemon.

A “Vegan Ramen”, which is in high demand in the Kingdom of the Netherlands,

called “Mountain’s Bounty Soup Stock Ramen” was developed by using the “Mountain’s Bounty Soup Stock”.

The famous Dutch herring sandwich calledThe Netherlands Island Sandwich; which is named after a famous island in Yamada Town, was arranged with a slice of “MARUTA”, a popular product of the Blue Tree bakery brand and fish from Sanriku, for this collaboration menu between Tamachi x Holland Kingdom.

For this collaborative menu between Yamada Town and the Kingdom of the Netherlands, we created a version of the famous Dutch herring sandwich,The Netherlands Island Sandwich with a slice of “MARUTA” bread from  Happo-ens original bakery “BLUE TREE” and Sanriku fish.

<Introduction of Mr. Jun Yamazaki, the owner of “Wami Ajidokoro Ippuku”>

Jun Yamazaki was born in Iwate prefecture in July, 1975.

When Jun Yamazaki was just a child, he made the decision to become a sushi chef after an encounter with a sushi chef that had left a lasting impression on him. After graduating from a culinary school, he trained and gained experience at traditional Japanese restaurants, seafood restaurants and various other places before he opened his restaurant “Wakai Ajidokoro Ippuku” in January 27, 2016.

He plays an active role as the face of the restaurant, and wants guests to enjoy sake and seasonal dishes that incorporates ingredients from Iwate. In December 2019, he provided support for the international exchange between Yamada Town and the Kingdom of the Netherlands together with Happo-en.

 

 

 

3. A pop-up showroom to support the host town exchange of Yamada Town x the Kingdom of the Netherlands will be held on November 28th (Sat) and 29th (Sun), 2020.

 

On November 28th (Sat) and November 29th (Sun), 2020, a pop-up event supporting the Host Town cultural exchanges between Yamada Town and the Kingdom of the Netherlands, called [Yamada Town x The Kingdom of the Netherlands Host Town Pop-up Showroom “Bounty Soup Stock Cafe”] will be held at Happo-en’s new pop-up event space, “MuSuBu”.

 

There will be an exhibition booth displaying the host town exchange activities between Yamada Town and the Kingdom of the Netherlands as well as introducing the “Thank you for reconstruction Host Town” project. Guest will also be able to purchase special products and souvenirs or they can enjoy dishes that were cooked using the two collaborative soup stocks.

Mr. Yamazaki, the chef at “Wami Ajidokoro Ippuku and Happo-en Head Chef Kanno will connect through an online platform, which will be broadcasted live at the Happo-en pop-up store MuSuBu. There they will speak with participants about the production of the “Oceans Bounty Soup Stock Ramen”.

In December 2019, the two teamed up to support international exchange activities in the Kingdom of the Netherlands, and again this time to produce the Oceans Bounty Soup Stock Ramen”, which is packed with the seafood from Yamada Town. We hope you will visit MuSuBu to taste this dish while listening to the story behind its production.

■What is the 2020 Host Town House?

During the Tokyo Olympic Games, the “2020 Host Town” will be set up for the first time in the Ariake district (Musashino University Ariake Campus); where many competition venues are concentrated, to widely publicize the charm of each municipality that will serve as host towns for the Tokyo 2020 Games, both at home and abroad.

This location will be used as a main information hub by displaying the past and current activities, as well as producing food made with ingredients from the countries and municipalities where the host town activities are carried out. The goal is for these Host Town exchanges can continue beyond 2020.

Details regarding Happo-en’s new facility “MuSuBu”

On August 28 (Fri), 2020, Happo-en opened a new pop-up showroom, “MuSuBu” on Platinum Street in Shirokanedai, Minato-ku. This pop-up event space has become a new hub for activities and providing new opportunities in the Platinum area as it offers a unique type of community content that focuses on “people” and “food” through a fusion of online and real life activities.
